According to the regulations of the United States Department of Agriculture (USDA) and the Canadian Department of Agriculture on organic production, “organic” milk is milk that is completely natural and free from chemicals. To achieve such outstanding nutritional, safety and all–natural benefits, organic milk must be produced through a long, meticulous process that is strictly controlled, meeting organic milk standards at every stage — from milk production to processing, storage and distribution — by reputable organisations around the world.
The production of a carton of organic milk must start from the stage of growing grass. The soil must have strong biological activity and a balance of minerals and organic matter, and must not contain any growth promoters, stimulants or chemical substances. Fertilisers must come from manure, green manure or other natural sources. In particular, farmers often use clover as a special “fertiliser” to help loosen and enrich the soil so that grass can grow well. Healthy soil provides high–quality grass as a nutritious feed source for the organic herd. The feed of organic cows must be 100% organic, free from pesticides and synthetic fertilisers, and absolutely free from genetically modified organisms (GMO).
Next, the herd of cows must also be raised according to strict standards in order to be certified organic. Farmers must select the healthiest cows from the best breeds to ensure that the animals remain strong with good immunity. In addition, the herd must absolutely not be given any artificial growth hormones (BGH), stimulants or milk–boosting drugs as in conventional herds. Milk is collected according to the cows’ natural physiological cycles so that the nutritional content and beneficial components are at their highest.
Organic cows are happy cows. They are free–range on clean organic pastures with fresh air and plenty of space to move around. With the comfort of roaming on green, chemical–free fields, the cows become more relaxed and content, producing higher–quality milk with a richer flavour and higher nutritional content than milk from conventional cows that are kept mainly in barns.
The final step in producing a carton of organic milk is packaging and preservation. UHT technology is used with advanced processing methods, sterilising the milk at very high temperatures for the shortest possible time to preserve its full nutritional value and natural aroma. Combined with modern vacuum packaging technology, organic milk lines can be stored for 9–12 months without the use of any preservatives.
Today, there are many reputable organic certification bodies, including the USDA certification of the U.S. Department of Agriculture and the organic certification of the European Union. To be labelled “Organic”, certification organisations carry out strict inspections and supervision of farms, grazing areas, barns and milking facilities to ensure that farms comply with organic regulations and standards. The production and packaging processes are also closely monitored and must be certified before products are sold to consumers.
